Quantitative Assessments of Acrylamide and Furan
Description: Quantitative assessment of the carcinogenic risks associated with dietary exposure to acrylamide and furan, contaminates found in certain foods cooked at high temperatures. These studies are supported by an interagency agreement between National Institute of Environmental Health Sciences (NIEHS)/National Toxicology Program (NTP) and FDA to support studies of mutual benefit to FDA and NIEHS/National Institute of Health (NIH).
Definition: Acrylamide and furan are heat-induced food contaminants that may be carcinogenic to humans. These substances are being assessed to determine the effects of exposure to humans. These studies will lead to a better understanding of mechanisms that contribute to a contaminant’s toxicity and the relationship to levels of exposure.
Public Health Outcome: These assessments will determine the carcinogenic risks of acrylamide and furan which will be used to prepare risk assessments for exposure to these chemicals at levels encountered in human food.
