Dictionary: Environmental sampling is a qualitative technique used to gain additional information on the possible source(s) of product contamination. The presence of pathogenic microorganisms in the environment of a food establishment can indicate poor sanitation or microbial niches. This information is critical to determining steps that can be taken to stop contamination and reduce the number of future outbreaks and/or recalls.
