Dictionary: Environmental sampling is a qualitative technique used to gain additional information on the possible source(s) of product contamination. The presence of pathogenic microorganisms in the environment of a food establishment can indicate poor sanitation or microbial niches.This information is critical to determining steps that can be taken to stop contamination and reduce the number of future outbreaks and/or recalls.
